Ingredients

Shortbread Crust
  • ½ cup unsalted butter melted (1 stick / 113g)
  • ¼ cup granulated sugar 50g
  • 1 teaspoon pure vanilla extract
  • ¼ teaspoon fine sea salt
  • 1 cup all-purpose flour 120g, spooned and leveled
Lemon Filling
  • 1 cup granulated sugar 200g
  • 3 tablespoons all-purpose flour
  • 3 large eggs room temperature
  • ½ cup fresh lemon juice 120ml, about 3–4 medium lemons
  • 1 tablespoon fresh lemon zest
  • Powdered sugar for dusting

Method

  1. Preheat & Prep: Preheat your oven to 350°F (177°C). Line an 8x8-inch metal baking pan with parchment paper, leaving an overhang on the sides. Lightly spray with nonstick cooking spray.
  2. Make the Crust: In a medium bowl, whisk together melted butter, granulated sugar, vanilla extract, and salt. Stir in the flour until a soft dough forms.
  3. Bake Crust: Press dough evenly into the bottom of the prepared pan. Bake for 18–20 minutes, or until the edges are lightly golden brown.
  4. Whisk Filling: While the crust bakes, whisk sugar and flour together in a large bowl. Add eggs, fresh lemon juice, and lemon zest. Whisk vigorously until smooth.
  5. Bake Lemon Layer: Remove crust from oven and pour filling directly onto the hot crust. Reduce oven temperature to 325°F (163°C). Bake for 18–22 minutes, or until the edges are set and the center has a slight jiggle when the pan is gently moved.
  6. Cool & Chill: Cool completely at room temperature on a wire rack, then cover and chill in the refrigerator for at least 2 hours until firm.
  7. Slice & Dust: Lift out using parchment overhang, dust with powdered sugar, and slice into 16 squares with a sharp knife.

Notes

  • Use Fresh Lemons: Freshly squeezed lemon juice and fresh zest provide the best flavor. Always use freshly squeezed lemon juice! Bottled lemon juice lacks bright acidity and leaves an unpleasant metallic aftertaste.
  • Pour Filling Over a Hot Crust: Pour the lemon filling over the crust immediately after it comes out of the oven. This allows the crust and filling to continue baking together without cooling the crust first.
  • Pan Selection: A metal 8×8-inch baking pan is recommended for this recipe because it heats efficiently and gives the crust a good texture. Glass or ceramic pans may require different baking times.
