- Preheat oven to 350°F (175°C) and lightly grease a 9x13-inch baking dish with cooking spray.
- In a bowl, mix the shredded chicken, 1 cup green enchilada sauce, and 1 cup shredded cheese until combined.
- Warm flour tortillas in the microwave wrapped in a damp paper towel for 30 seconds to make them pliable. Fill each tortilla with ¼ cup of chicken mixture, roll tightly, and arrange seam-side down in the baking dish.
- Melt butter in a saucepan over medium heat. Add minced garlic and sauté for 30 seconds. Whisk in flour and cook for 1 minute. Gradually whisk in chicken broth and cook 3–4 minutes until thickened.
- Remove saucepan from heat. Stir in sour cream, diced green chiles, salt, and black pepper until smooth.
- Pour white sauce evenly over enchiladas and top with remaining 1 cup shredded cheese.
- Bake for 22–25 minutes until golden and bubbling. Let rest 5 minutes, garnish with fresh cilantro, and serve warm.
