Ingredients
  

Chicken and Breading
  • 1.5 lbs boneless skinless chicken breasts
  • 0.5 cup whole wheat flour
  • 3 large eggs
  • 1 cup whole wheat breadcrumbs
  • 0.5 cup grated Parmesan cheese
  • 2 tsp dried basil
  • 2 tsp dried parsley
  • 0.25 tsp black pepper
Topping and Assembly
  • 1.5 cups marinara sauce
  • 1.5 cups shredded mozzarella cheese

Method
 

  1. Preheat & Prep: Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper.
  2. Prepare Chicken: Butterfly the chicken breasts and pound them to a uniform ¼-inch thickness. This is the secret to tender, evenly cooked chicken.
  3. Set Up Breading Station: Use three shallow bowls. Fill the first with flour, the second with beaten eggs, and the third with a mixture of breadcrumbs, Parmesan, pepper, basil, and parsley.
  4. Coat: Dip each chicken cutlet into the flour, then the egg, and finally press firmly into the breadcrumb mixture until fully coated.
  5. Bake: Arrange the cutlets on the prepared baking sheet. Bake for 15 minutes, then flip and bake for another 15 minutes.
  6. Broil: Remove from the oven. Top each cutlet with ¼ cup marinara sauce and ¼ cup shredded mozzarella. Return to the oven and broil for 2 minutes, or until the cheese is melted and bubbling.
  7. Serve: Garnish with fresh herbs if desired and serve immediately.

  • Storage: Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in a toaster oven to regain crispiness.
