Preheat & Prep: Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper.
Prepare Chicken: Butterfly the chicken breasts and pound them to a uniform ¼-inch thickness. This is the secret to tender, evenly cooked chicken.
Set Up Breading Station: Use three shallow bowls. Fill the first with flour, the second with beaten eggs, and the third with a mixture of breadcrumbs, Parmesan, pepper, basil, and parsley.
Coat: Dip each chicken cutlet into the flour, then the egg, and finally press firmly into the breadcrumb mixture until fully coated.
Bake: Arrange the cutlets on the prepared baking sheet. Bake for 15 minutes, then flip and bake for another 15 minutes.
Broil: Remove from the oven. Top each cutlet with ¼ cup marinara sauce and ¼ cup shredded mozzarella. Return to the oven and broil for 2 minutes, or until the cheese is melted and bubbling.
Serve: Garnish with fresh herbs if desired and serve immediately.
