Ingredients
  

For the Stir Fry Sauce
  • ½ cup low-sodium soy sauce
  • cup chicken broth
  • 2 tbsp honey or brown sugar
  • 1 tbsp toasted sesame oil
  • 1 tbsp cornstarch
For the Chicken and Veggies
  • 1.5 lbs boneless skinless chicken breasts (or thighs), cut into bite-sized pieces
  • 2 tbsp olive oil divided
  • 1 cup broccoli florets
  • 1 bell pepper red, yellow, or orange, sliced
  • 1 cup sugar snap peas or snow peas
  • 1 large carrot thinly sliced
  • 3 cloves garlic minced
  • 1 tbsp fresh ginger minced
  • For serving Optional: Green onions (sliced), sesame seeds, and cooked white or brown rice

Method
 

  1. Whisk the Sauce: In a small bowl, whisk together the soy sauce, chicken broth, honey, sesame oil, and cornstarch until smooth. Set it aside so it's ready to go.
  2. Sear the Chicken: Heat 1 tablespoon of oil in a large skillet or wok over medium-high heat. Add the chicken pieces in a single layer. Cook for about 5–6 minutes, stirring occasionally, until browned and cooked through. Transfer the chicken to a plate and set aside.
  3. Cook the Veggies: Add the remaining tablespoon of oil to the same skillet. Toss in the broccoli, bell pepper, snap peas, and carrots. Cook for 3–4 minutes until the veggies are tender-crisp.
  4. Bring It All Together: Add the minced garlic and ginger to the veggies and cook for just 30 seconds until fragrant. Reduce the heat to medium. Return the cooked chicken back to the skillet.
  5. Sauce and Simmer: Give your sauce mixture a quick stir and pour it into the skillet over the chicken and veggies. Toss everything together continuously for about 1–2 minutes, or until the sauce bubbles and thickens into a gorgeous, glossy glaze.
  6. Serve! Remove from heat. Garnish with sliced green onions and sesame seeds if desired. Serve hot over a bed of fluffy rice or noodles.

  • Prep everything first: Stir-fries move fast! Have your chicken chopped, veggies sliced, and sauce mixed before you even turn on the stove.
  • Cut evenly: Try to cut your chicken pieces into uniform sizes so they all cook through at the exact same time.
