Ingredients

Macerated Strawberries
  • 2 lbs fresh strawberries sliced
  • 3 tbsp granulated sugar
  • 1 tbsp fresh lemon juice
Shortcake Biscuits
  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tbsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup unsalted butter cold and cubed
  • 3/4 cup cold buttermilk
  • 1 tsp pure vanilla extract
  • 1 tbsp buttermilk, for brushing
  • 1 tbsp coarse sugar for topping
Whipped Cream
  • 1 cup heavy whipping cream cold
  • 2 tbsp powdered sugar
  • 1 tsp pure vanilla extract

Method

  1. Macerate the strawberries: Toss the sliced strawberries with sugar and lemon juice. Let them sit at room temperature for 30 minutes to release their juices.
  2. Prepare the dough: Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper. Whisk together the flour, sugar, baking powder, baking soda, and salt. Cut in the cold butter until the mixture has pea-sized pieces of butter throughout.
  3. Add the buttermilk: Stir in the cold buttermilk and vanilla until a shaggy dough forms. Don't overmix.
  4. Shape the biscuits: Turn the dough onto a lightly floured surface. Fold it over itself 3 to 4 times, then pat it to 1-inch thickness. Cut 6 biscuits with a 2.5-inch round cutter, pressing straight down without twisting.
  5. Bake: Place the biscuits on the prepared baking sheet. Brush the tops with 1 tablespoon of buttermilk and sprinkle with coarse sugar. Bake for 12 to 15 minutes, until golden brown. Cool for 15 minutes.
  6. Whip the cream: Beat the cold heavy cream, powdered sugar, and vanilla until medium-soft peaks form.
  7. Assemble: Slice the biscuits in half. Spoon strawberries and some of their syrup over the bottom halves, then add whipped cream and top with the remaining biscuit halves. Serve immediately.

Notes

  • Keep the butter and buttermilk cold for tender, flaky biscuits.
  • Don't overmix the biscuit dough.
  • Bake the biscuits on the day you plan to serve them for the best texture.
  • The strawberries can be prepared up to 24 hours ahead and stored in the refrigerator.
