Classic Garlic Herb Fries

Crisp, golden-brown homemade fries tossed in garlic butter, fresh parsley, rosemary, and thyme. Easy to make in the oven or air fryer for a restaurant-quality side dish!

Ingredients
  

For the Crispy Potato Base
  • 2.5 lbs Russet potatoes peeled and cut into 1/4-inch sticks
  • 3 tbsp olive oil
  • 1 tsp cornstarch
  • 1 tsp garlic powder
  • 1/2 tsp smoked paprika
  • 1 tsp sea salt
  • 1/2 tsp black pepper
For the Garlic Herb Butter Toss
  • 3 tbsp unsalted butter melted
  • 4 cloves garlic finely minced
  • 2 tbsp fresh Italian parsley finely chopped
  • 1 tbsp fresh rosemary finely chopped
  • 1 tsp fresh thyme leaves

Method
 

Prep & Soak
  1. Slice the potatoes into 1/4-inch matchsticks and soak in a large bowl of cold water for 20-30 minutes to remove extra starch.
  2. Drain thoroughly and pat completely dry with paper towels.
Season & Bake
  1. Preheat oven to 425°F (220°C) and line two baking sheets with parchment paper.
  2. In a large bowl, toss the dried potato sticks with olive oil, cornstarch, garlic powder, smoked paprika, salt, and black pepper.
  3. Spread in a single layer on the baking sheets, ensuring they don't overlap.
  4. Bake for 28-32 minutes, flipping halfway through, until deep golden and crispy.
Toss & Serve
  1. Melt butter in a small pan over low heat, add minced garlic, and cook for 60 seconds until fragrant (do not brown).
  2. Transfer hot baked fries to a bowl, drizzle with garlic butter, sprinkle fresh parsley, rosemary, and thyme, then toss gently and serve immediately.

Notes

  • Potato Choice: Russet potatoes give the crispest exterior and fluffiest center.
  • Air Fryer Method: Air fry at 400°F (200°C) for 15–18 minutes, shaking the basket halfway, then toss with garlic butter.
