Prep & Soak
- Slice the potatoes into 1/4-inch matchsticks and soak in a large bowl of cold water for 20-30 minutes to remove extra starch.
- Drain thoroughly and pat completely dry with paper towels.
Season & Bake
- Preheat oven to 425°F (220°C) and line two baking sheets with parchment paper.
- In a large bowl, toss the dried potato sticks with olive oil, cornstarch, garlic powder, smoked paprika, salt, and black pepper.
- Spread in a single layer on the baking sheets, ensuring they don't overlap.
- Bake for 28-32 minutes, flipping halfway through, until deep golden and crispy.
Toss & Serve
- Melt butter in a small pan over low heat, add minced garlic, and cook for 60 seconds until fragrant (do not brown).
- Transfer hot baked fries to a bowl, drizzle with garlic butter, sprinkle fresh parsley, rosemary, and thyme, then toss gently and serve immediately.
Notes
- Potato Choice: Russet potatoes give the crispest exterior and fluffiest center.
- Air Fryer Method: Air fry at 400°F (200°C) for 15–18 minutes, shaking the basket halfway, then toss with garlic butter.
